Crostata di farro con cioccolato al cardamomo e pere | Spelt tart with pears and cardamom chocolate

Tempo fa sono stata coinvolta in un bel progetto:  “Impastandosimpara – 12 blogger per 4 stagioni”, ideato da Molino Grassi in collaborazione con l’Aifb, che vede coinvolte 12 blogger dell'associazione.
Tutte noi abbiamo avuto il compito di interpretare un piatto, con il nostro stile e creatività utilizzando uno dei 12 diversi tipi di farine proposte (a me è stata assegnata la farina di farro).
Alla fine del 2015, questo progetto vedrà nascere un bellissimo calendario per l'anno prossimo,  che conterrà  le foto e le ricette proposte dalle 12 blogger.
La ricetta che ho proposto è una frolla profumata e friabile fatta senza utilizzare le uova o latte, quindi 100% vegan.
Per il ripieno, invece della solita marmellata, l'ho farcita con una crema al cioccolato fondente  con un pizzico di cardamomo in cui ho fatto delicatamente affondare delle pere affettate.
In cottura la frolla si fa prezioso scrigno per un ripieno fondente.
Il profumo intenso di cioccolato, cardamomo e pere invaderà la vostra cucina appena sfornerete questa torta, e quando la porterete in tavola sarà un sicuro successo.



Ingredienti:
 per uno stampo di 24 cm di diametro

Per la crostata:
250 g farina di farro
190 g farina 0
50 g amido di mais
10 g lievito per dolci
100 g zucchero di canna
50 g di olio di oliva
60 g di olio di girasole
125 g latte di soia
1 pizzico di sale

Per il ripieno:
200 g di cioccolato fondente
2 uova
100 g di farina di farro
50 g di zucchero di canna
110 g di latte di soia
3 pere (santa maria)
Cardamomo in polvere q.b.
1 pizzico di sale


Come si fa:

Mescolate in una ciotola le farina, l'amido di mais, il sale e il lievito.
A parte create un'emulsione con il latte e i due oli, unite lo zucchero.
Amalgamate i due composti, lavorandoli con un forchetta.
Continuate a impastare con le mani, fino a quando otterrete un panetto sodo e omogeneo.
Riponete in frigo, coperto da pellicola per almeno 30 - 40 min.
Nel frattempo preparate il ripieno:
Rompete la barretta di cioccolato in un pentolino con poco latte e fate sciogliete. Spegnete e lasciate intiepidire.
Versate in una ciotola, aggiungete la farina setacciata, il latte,  lo zucchero, le uova  il sale e il cardamomo in polvere.
Amalgamate con una spatola.
Riprendete la frolla dal frigo: stendete i 3/4 dell'impasto con il mattarello, foderate lo stampo, precedentemente unto ed infarinato e bucherellare il fondo con la forchetta.
Versate il composto di cioccolata.
Tagliate a metà le pere, togliete i semi e praticate dei tagli per la lunghezza.
Appoggiate le pere sulla crema, cercando di allargare le fette.
Con impasto rimasto create delle decorazioni a piacere, io ho scelto delle foglie autunnali.
Infornate a 180 ° per circa 40-45 minuti finché la crostata è ben dorata e il ripieno cotto (fate la prova stecchino.
Servite tiepida, magari accompagnata con un bicchierino di vino liquoroso.

All of us have had the task of create one recipe, with our style and creativity by using one of 12 different types of flour proposals (I was assigned to spelt flour).
At the end of 2015, this project will bring forth a beautiful calendar for next year, which will contain photos and  all recipes.
The recipe that I have proposed is a fragrant and crumbly tart crust made without using eggs or milk, so it's 100% vegan.
For the filling, instead of the usual jam, I stuffed with fondant dark chocolate  cream with a hint of cardamom where I did gently sinking of sliced ​​pears.
In baking,the crust  becomes a precious treasure chest for a fudge filling.
Ithe intense  smell of chocolate, cardamom and pear will' invade your kitchen andyou fall in love at the forst bite. And when you bring to the table will be great success.

Ingredients:
(for  24 cm mold)

For the crust:
250 g spelt flour
190 g 0 flour 
50 g maize starch
10 g baking powder
100 g brown sugar
50 g of olive oil
60 g of sunflower oil
125 g of soy milk
1 pinch of salt

For the filling:
200 g of dark chocolate
2 eggs
100 g spelled flour
50 g of cane sugar
110 g of soy milk
3 pears 
Cardamom powder q.s.
1 pinch of salt



Directions:

Mix in a bowl the flour, cornstarch, salt and baking powder.
Aside created an emulsion with milk and two oils, add the sugar.
Mix the two compounds, working them with a fork.
Continue to knead with your hands until you get a ball hard and smooth.
Store in refrigerator, covered with foil for 30 - 40 min.
Meanwhile, prepare the filling:
Break the chocolate in a saucepan with a little milk and make sciogliete.Spegnete and let cool.
Pour into a bowl, add the flour, milk, sugar, eggs, salt and cardamom powder.
Mix with a spatula.
Take back the pastry from the refrigerator: the roll out 3/4 of the dough with a rolling pin, line the mold, greased and floured and puncture the bottom with a fork.
Pour the chocolate.
Halve the pears, remove the seeds and cut the length of practice.
Place the pears on the cream, trying to enlarge the slices.
With dough was created decorations at will, I chose the autumn leaves.
Bake at 180 degrees for about 40-45 minutes until the crust is golden brown and the filling cooked (do the toothpick test).
Let cool and serve warm.
