Hummus di barbabietola | Beetroot hummus

Iniziamo la settimana con una sferzata di colore. Un vibrante rosa intenso che contrasta con il cielo grigio di questi ultimi giorni.
E la natura è meravigliosa, perché ci da questa variopinta verdura proprio quando il colore fuori viene a mancare.
Con la barbabietola avevo già fatto i burger, ricordate? non trovandola così spesso quando mi capita di vederla è sempre gioia immensa.
 E così, appena adocchiate al mercato, non me le sono fatte scappare ed ho subito deciso  che sarebbero diventate hummus (a proposito, sul blog trovate le altre versioni con i borlotti, le fave fresche e già che siamo in tema di salsine e cremine sfiziose, vi metto anche la babaganoush).
Se non trovate le barbabietole fresche e/o volete risparmiarvi la cottura, potete usare quelle precotte,  ma il sapore sarà molto diverso.


 Ingredienti per 3-4 persone

 3 - 4 barbabietole
250 g di ceci in scatola
60 g di anacardi
2 cucchiai colmi di tahina
Scorza e succo di 1 limone
2 spicchi di aglio
Olio extra vergine di oliva q.b.
Semi di sesamo per guarnire
Paprika (facoltativo)

 Come si fa:

Lavate le barbabietole e lessatele fino a quando sono tenere. Pelatele e tagliatele in quarti.
Scolate i ceci e sciacquateli.
Nel robot da cucina unite le barbabietole con i ceci e i resto degli ingredienti.
Aggiungete acqua e olio per aggiustare la densità.
Regolate di sale e servite in ciotoline con un filo di olio e semi di sesamo e paprika, se vi piace.


  • Questo hummus è ottimo spalmato sul pane, pita, per accompagnare il riso o come contorno.
  • Sentitevi liberi di mettere un solo spicchio di aglio se volete un crema dal sapore più delicato.

With beetroot I had already done the burger, do you remember?  It's not so easy to find here, and when I see it's a suddely joy.
When I saw these roots at the farmers market few days ago, I immediately decided that they would become hummus (by the way, in the blog will find other versions with borlotti beans and fresh fave, and just we're on the topic of delicious sauces and creams, I suggest babaganoush).
If not find the fresh beetroots and / or want to save cooking time, you can use those pre-cooked, but the taste will be very different.



  Ingredients: Serves 3-4 people

 3-4 beetsroots
250 g canned chickpeas
60 g cashew
2 full tablespoons of tahini
Zest and juice of 1 lemon
2 cloves of garlic
Extra virgin olive oil q.s.
Sesame seeds for garnish
Paprika (optional)


Direction:

Wash beets and cook until they are tender. Peel and cut into quarters.
Drain and rinse the chickpeas.
In food processor add the beets, chickpeas and the rest of the ingredients.
Add water and oil to adjust the density.
Season with salt and serve with a drizzle of oil, sesame seeds and paprika, if you like.


  • This hummus is great spread on bread, pita, with rice or as a side dish.
  • Feel free to put only one clove of garlic if you want a more delicate flavor hummus.

On fresh tuscan bread.

  2. A parte che questo colore è fantastico e non smetterò mai di pensarlo... a parte che ormai di hummus ci potrei vivere, ma davvero proprio non mi aspettavo di ritrovarmelo così, bello e saporito e ben fotografato a festa! :)

  3. Concordo con Roberta sopra di me, il colore ammalia... :-) Mi devo decidere a fare questo hummus, tutte le volte che lo vedo penso sia tra i più belli che esistano!
