Note e idee:

Here's the cake which has received many approvals on Instagram!
Created specially for the #nationalbakingweek and born of a long-established friendship and collabs with the brand of the best flavored coffee ever, Little's, which has been in my cups for years.
A coffee cake, then, but also super chocolaty and stuffed with smooth fruit compote.
Very delicious, but always with a careful attention to ingredients, nutritional values and any intolerance.
Infact there are no eggs, no yeast. No oil or butter, the fats come from the dark chocolate 99%.
Milk, you can easily substitute it with vegan alternatives :)
Ingredients:
1 1/2 cups flour
20 g brown sugar
10 g dark chocolate 99% , melted
3 tablespoons cocoa powder
1 teaspoon baking soda
1/2 cup milk
1 tablespoon apple vinegar
1 teaspoon vanilla extract (optional)
1 teaspoon instant coffee Littles
For filling:
Sugarless blueberries compote
4 coffee cups
For frosting:
20 g dark chocolate 99%
Shredded coconut
Instructions
Combine flour, sugar, cocoa powder, baking soda, salt, vinegar, melted dark chocolate, vanilla extract (if use) and instant coffee.
Stir well together until smooth and blended.
Bake in a 350 F oven for about 30 minutes.
Remove from oven and allow to cool before frosting.
Once cakes have cooled, use a sharp knife and cut the cake evenly in half, horizontally.
Place your first cake layer on your cake serving plate. Pour half of coffe on base layer, then spread a big dallop of fruit composte and spread on layer, cover with the other layer.
Practice holes on the surface of the cake with a toothpick and pour the remaining coffee.
Melt the chocolate, let it cool a little, and frost the cake. Finish with a handful of grated coconut.
Notes:
If the cake tends to dry, open it and pour some coffee again and add another fruit compote.
I also added yogurt and banana slices. It become a new cake. Delish!
